Jennifer Vimbor, MS, RDN, LDN is a Registered Dietitian-Nutritionist (RDN) and Licensed Dietitian-Nutritionist (LDN). She graduated with her master’s degree in nutrition education from Columbia University and didactic program at Columbia-Presbyterian Hospital in New York City. In 2003, Jennifer founded Nutrition Counseling Services (NCS) in order to promote optimal nutrition and health. She is passionate about improving lives by promoting sustainable wellness.
As a result of her clinical experience at St. Vincent’s Hospital Manhattan in New York City and Advocate Illinois Masonic Medical Center in Chicago, Jennifer incorporates current science with nutrition concepts and education. She effectively conveys this information according to the needs of the client.
Jennifer works closely with Executive Chefs, Sous Chefs, General Managers and other team members at 5-Star Hotels, where she analyzes recipes and helps to develope menus. She designs meals that support dietary needs such as gluten-free, allergy-friendly, vegetarian and vegan.
In April 2013, Jennifer teamed up with NBC’s Biggest Loser Resort in Chicago as the Senior Dietitian. She helped guests acquire information on how to change the way to approach, manage, portion, menu plan, and purchase food for healthy long-term lifestyle transformations.
As an avid runner, multi-marathoner, and triathlete, Jennifer has first-hand knowledge of the nutritional needs of the athlete. She has worked with the New York Runners Only Club, Chicago Areas Runners Association (CARA), Chicago’s Rock ‘n’ Roll Half Marathon and advises numerous athletes in groups and privately, including beginner to professional athletes, dancers, runners, triathletes, body builders, and yoga instructors, on eating for success.
Jennifer regularly contributes to local and national television networks and radio shows such as ABC, NBC, WGN and WCIU Morning and Nightly News as well as featured or quoted in many national publications including Cosmo, Fitness, Runner’s World, and Women’s Health Magazine. Local media participation includes the Chicago Tribune, the Reader, and WXRT Radio. Additionally, she often writes for the leading online endurance magazine Active.com.
